Food for Life Instructor Nancy Rodriguez, R.N., B.S.N., C.D.E.
Nancy is a licensed registered nurse in Illinois.
She received her bachelor of science in nursing from Lewis University. She
earned her specialty as a certified diabetes educator (CDE) from the National
Certification Board of Diabetes Educators. Nancy currently works as a diabetes
nurse clinician at a center that is recognized as a Diabetes Education
Accredited Program. She is founder, CEO, and director of Latino Instruction in
Diabetes to Empower and Reduce risks (LIDERr) Wellness Foundation, a non-profit
education organization. Nancy also received the Hispanic Heritage Award and was
nominated for Nursing Excellence for her community service. Her mission is to
educate, equip, and empower underserved families, especially with Spanish-language
and financial barriers, with the knowledge to prevent and reverse chronic
diseases like diabetes, through low-fat, plant-food diets and lifestyle
Why did you become a Food for Life instructor?
"I do this in honor of my mother Elizabeth and underserved
Latino families, especially Spanish-speaking children who are twice as likely
to develop diabetes!"
