Food for Life Instructor Kat Mendenhall

Kat Mendenhall is a Texas activist on a mission to mend the world through whole-food, plant-based nutrition and cruelty-free products. She is a vegan lifestyle coach and educator certified by the Main Street Vegan Academy, a culinary nutrition expert certified by the Academy of Culinary Nutrition, and holds a certification in plant-based nutrition by the T. Colin Campbell Foundation at Cornell University. A lifelong health, fitness, and cooking enthusiast, Kat applies these passions in her offerings of coaching, cooking classes, workshops, and recipe creations. Her food philosophy takes a no frills, no fuss, and fast approach that includes buying ingredients that are chosen consciously, organic, and local when possible, and using them in simple recipes that are balanced, nutritious, healing, and most importantly filling.

Why did you become a Food for Life instructor?

"I'm dedicated to empowering people to make informed food choices, debunking myths about nutrition, and giving people the tools and resources they need to live according to their own values of compassion and wellness."

Here is what class attendees are saying…

“This class has made a huge difference in my overall well-being. I’ve lost 18 pounds in seven weeks. I feel better, sleep better, and am in an overall better mood. Even my skin and hair have improved.”
-Tiffany M., Providence Cancer Center, Anchorage, Alaska

"Everyone who is concerned about nutrition will benefit from this class — and enjoy it. For those of us challenged to survive cancer, it is a great inspiration!”
-Brian C., St. Vincent’s Medical Center in Bridgeport, Conn.

"After five weeks on the program, my husband and I have both lost 10 pounds. My blood sugar has dropped 30 points. My doctor says I may get off all medications at the next visit. I am a breast cancer survivor and my husband has heart disease, so this is a must for us!”
-Annie H., Roanoke Recreation Center, Roanoke, Texas
